- Cut off both ends of the delicata squash and slice it in half lengthwise. Scoop out the seeds and cut into ½-inch thick half-moons.
- In a small bowl, mix olive oil, maple syrup, thyme, smoked paprika, sea salt, and black pepper. Pour over the squash and toss to coat.
- Spread the seasoned squash in a single layer on a baking sheet.
