  • 2 6-ounce salmon fillets
  • 1/2 cup pecans finely chopped
  • 1/4 cup breadcrumbs
  • 1/4 cup maple syrup
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, mix together the maple syrup, balsamic vinegar, Dijon mustard, garlic powder, salt, and black pepper until well combined.
  3. Place the salmon fillets skin-side down on the prepared baking sheet. Brush the maple balsamic mixture generously over the top of each fillet.
  4. In another bowl, combine the chopped pecans and breadcrumbs. Press the pecan mixture onto the top of each salmon fillet to create a crust.
  5. Drizzle the olive oil over the crusted salmon.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Let the salmon rest for a few minutes before serving.
