Ingredients
  

  • 2 cups glutinous rice also known as sticky rice
  • 1 ½ cups coconut milk
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 2 ripe mangoes peeled and sliced
  • Sesame seeds or mung beans for garnish optional

Method
 

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 30-40 minutes, or until the rice is tender and sticky.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves, but do not let it boil.
  4. Once the rice is cooked, transfer it to a large bowl and pour about 1 cup of the coconut milk mixture over it. Stir gently to combine. Let it sit for about 15-20 minutes to absorb the flavors.
  5. To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with the remaining coconut milk mixture. Garnish with sesame seeds or mung beans if desired.

Notes
