Method

Step-by-Step Instructions
  1. Begin by hulking and washing 4 cups of fresh strawberries. Use a potato masher to crush the strawberries in a large bowl until they reach a chunky texture.
  2. Carefully pour the mashed strawberries into a measuring cup to ensure you have exactly 3½ cups of the crushed fruit.
  3. In a separate bowl, whisk the contents of the Low Sugar Strawberry Freezer Jam pectin box.
  4. Gradually stir the pectin into the bowl of crushed strawberries along with 1 tablespoon of fresh lemon juice.
  5. Add 2 cups of granulated sugar to the strawberry mixture, stirring vigorously until fully dissolved.
  6. Carefully spoon the thick strawberry mixture into freezer-safe half-pint jars, leaving about ¼ inch of headspace at the top.
  7. Using a spatula, gently press down to eliminate any air pockets in the jam.
  8. Place the jars in the freezer for 24 hours to set properly.

Notes

Explore different berry combinations, but adjust pectin accordingly for best results.
