Preparation Steps
- Preheat your oven to 350°F (175°C) and grease your 8-inch round cake pan, optionally lining the bottom with parchment paper.
- In a medium mixing bowl, whisk together 1 ¾ cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt until evenly blended.
- In a large mixing bowl, whisk together 3 large eggs, 1 cup of yogurt, ¾ cup of granulated sugar, ½ cup of vegetable oil, and 2 teaspoons of vanilla extract until smooth. Fold in the zest of one lemon if desired.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30 to 35 minutes until golden brown and a toothpick inserted comes out clean.
- Once baked, allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Once the cake is cool, dust with powdered sugar or top with fresh berries, whipped cream, or chocolate sauce as desired.
