Ingredients

For the Cake
  • 2 cups Cake Flour Provides a delicate crumb and structure; substituting with all-purpose flour may yield varying textures.
  • 1 cup Granulated Sugar Sweetens the cake; reducing sweetness can be an option if desired.
  • 1 tablespoon Baking Powder Acts as a leavening agent; ensure it's fresh for optimal lightness.
  • 6 large Egg Whites Whipped to stiff peaks for an airy texture; ensure no yolk contamination.
  • 1 cup Whole Milk Adds moisture and richness; substitute with almond or oat milk for dairy-free.
  • 1 tablespoon Pure Vanilla Extract Enhances flavor profile; almond extract is a delightful alternative.
  • ½ cup Unsalted Butter (melted) Contributes richness and moisture; swap with coconut oil for dairy-free.
  • 1 cup Powdered Sugar Used for frosting to create a smooth finish; homemade powdered sugar can be made.
For the Frosting
  • 1 cup Powdered Sugar Essential for a sweet frosting; ensure it's finely sifted.
  • ½ cup Unsalted Butter (softened) Adds creaminess to the frosting; softened makes it easier to spread.
  • ¼ cup Heavy Cream Brings a silky richness; can be substituted with milk for a lighter option.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with unsalted butter or non-stick cooking spray.
  2. In a large mixing bowl, whisk together 2 cups of cake flour, 1 tablespoon of baking powder, and 1 cup of granulated sugar until well combined. Set aside.
  3. In a separate bowl, whip 6 egg whites until they reach stiff peaks, about 4-5 minutes.
  4. In another bowl, mix together 1 cup of whole milk, ½ cup of melted unsalted butter, and 1 tablespoon of pure vanilla extract until smooth.
  5. Gradually fold the wet mixture into the dry ingredients until just combined.
  6. Gently fold the whipped egg whites into the batter in three additions to preserve air.
  7. Pour the batter evenly into the prepared pans and bake for 25-30 minutes until golden and a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before inverting onto wire racks to cool completely.
  9. Prepare the frosting by mixing together softened unsalted butter, powdered sugar, and heavy cream until smooth.
  10. Spread the frosting over the top of one layer, place the second layer on top, and finish frosting.
