  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme, chopped
  • 1 lemon zested and juiced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, minced garlic, salt, black pepper, thyme, lemon zest, and lemon juice. Mix well to create a marinade.
  3. Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. Heat a large oven-safe skillet over medium-high heat. Once hot, add the marinated chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  5. Pour the chicken broth into the skillet around the chicken.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Remove the skillet from the oven and let the chicken rest for 5 minutes before slicing.
  8. Garnish with fresh parsley and serve with your choice of sides.
