Preparation Steps
- In a medium saucepan, combine 1 cup of water, ½ cup of unsalted butter, and 1 tablespoon of granulated sugar. Bring to a rolling boil over medium heat, then quickly stir in 1 cup of all-purpose flour until a dough forms, pulling away from the sides. Allow to cool for about 5 minutes, and then beat in 4 large eggs one at a time until smooth and glossy.
- Using a piping bag, carefully pipe the choux pastry dough onto a baking sheet lined with parchment paper, shaping into 4 inch long lines. Preheat your oven to 400°F (200°C).
- Bake for 25-30 minutes, or until puffed and golden brown. Avoid opening the oven door during baking. Once risen and crisp, remove and let cool on a wire rack.
- In a large bowl, whip 1 cup of heavy cream until soft peaks form. Gradually fold in zest and juice of 2 lemons and ½ cup of sugar until smooth and creamy.
- In a blender, combine 1 cup of fresh raspberries and 1 cup of powdered sugar until smooth. Strain the mixture through a fine mesh sieve to remove seeds.
- Once cooled, slice the eclairs open and pipe in the lemon cream filling, then drizzle with strawberry glaze.
Notes
For best results, ensure the eclairs cool completely before filling to prevent the cream from melting. Always use fresh raspberries for optimal flavor.
