Step-by-Step Instructions for Lemon Mozzarella Pizza
- If using fresh mozzarella, drain it and dab it with paper towels to absorb excess moisture. Prepare your pizza dough and preheat the oven to its highest setting, ideally around 475°F (245°C), for at least 30 minutes.
- In a small jar, combine extra virgin olive oil, water, lemon zest, lemon juice, chopped fresh parsley, minced garlic, fine salt, and black pepper. Shake vigorously to emulsify the brine.
- On parchment paper, press and stretch the prepared dough into a rectangle about 9x13 inches, creating dimples across the surface to hold the brine. Transfer to a pizza peel or rimmed baking sheet.
- Pour the brine evenly over the dimples of the dough and distribute fresh mozzarella pieces on top.
- Slide the pizza onto the preheated oven surface. Bake for 8-10 minutes until the crust is golden and the cheese is bubbly.
