Method
 

Cooking Instructions
  1. Cook the orzo by bringing a large pot of salted water to a boil, add orzo and cook until al dente, about 8-10 minutes.
  2. In a skillet, heat olive oil. Add shrimp in a single layer, sauté for 2-3 minutes per side until pink and opaque.
  3. Add more olive oil, reduce heat to medium, and sauté minced garlic until fragrant, around 1 minute.
  4. Stir in lemon zest and juice, season with salt and pepper, cook for about 30 seconds.
  5. Mix in cooked orzo, shrimp, and parsley, add feta, cherry tomatoes, and olives, heat through for another 2-3 minutes.
  6. Adjust seasoning, then plate the dish, garnish with extra parsley and feta, and serve immediately.
