Ingredients
  

  • 2 cups cooked pasta any shape
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1/4 cup olive oil for frying

Method
 

  1. In a large mixing bowl, combine the cooked pasta, grated Parmesan cheese, breadcrumbs, eggs, parsley, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix until well combined.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Using a tablespoon, scoop out the pasta mixture and form it into small patties (about 2 inches in diameter).
  4. Carefully place the patties into the hot skillet, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  5. Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Repeat with the remaining mixture.
  6. Serve warm, garnished with additional parsley or a side of marinara sauce for dipping.
