Method

Preparation
  1. In a mixing bowl, whisk together soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, grated ginger, and sesame seeds until smooth. Add chicken and marinate for at least 20 minutes, up to 2 hours.
  2. Prepare the slaw by combining shredded cabbage and grated carrot. Mix mayonnaise, rice vinegar, sugar, salt, and pepper separately, then dress the cabbage mixture and chill.
Cooking
  1. Heat a cast iron skillet over medium-high heat. Cook chicken for 6-7 minutes on each side until charred and reaches 165°F. Let rest before slicing.
  2. In the same skillet, melt butter and lower heat. Toast buns cut-side down until golden brown.
Assembly
  1. Assemble the sandwich with the toasted bun bottom, sliced chicken, additional BBQ sauce if desired, and slaw. Top with the bun and serve immediately.

Notes

Marinate chicken for 2 hours for enhanced flavor. Use the right buns for the best texture. Always check chicken temperature for safety. Store slaw separately until ready to serve.
