Ingredients
  

For the Chicken
  • 1 pound Chicken Tenders fresh or frozen, thawed
  • 1 cup Almond Flour keto-friendly flour
  • 2 cups Plain Pork Rinds or crushed sunflower seeds
  • 1/2 cup Grated Parmesan Cheese or nutritional yeast for dairy-free
  • 1/2 cup Buffalo Wing Sauce sugar-free
  • 2 large Eggs beaten
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • 1/4 cup Keto-Friendly Oil (e.g., Olive Oil) for frying
For the Salad Base
  • 4 cups Romaine Lettuce chopped
  • 4 slices Uncured Bacon or turkey bacon
  • 1 medium English Cucumber diced
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Blue Cheese Crumbles or feta cheese
For the Dressing
  • 1/2 cup Blue Cheese Dressing homemade preferred

Method
 

Preparation
  1. In a food processor, combine crushed pork rinds, almond flour, grated Parmesan cheese, smoked paprika, and a pinch of salt. Pulse until fully blended.
  2. Create a breading station with beaten eggs in one bowl and the prepared breading in another.
  3. Dip chicken tenders in beaten eggs then into the breading, pressing to adhere.
  4. Fry breaded chicken tenders in a skillet with heated oil for 4-6 minutes on each side until golden brown.
  5. Remove chicken from skillet, drain on paper towels, and drizzle with buffalo wing sauce, tossing to coat.
  6. In a large bowl, layer chopped romaine, bacon, cucumber, and cherry tomatoes for the salad base.
  7. Top the salad with the buffalo chicken tenders.
  8. Drizzle blue cheese dressing over the salad and serve immediately.
