Ingredients
  

  • 2 cups almond flour
  • 1 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup whole almonds for topping
  • Powdered sugar for dusting optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, powdered sugar, salt, and baking powder. Mix well.
  3. In a separate bowl, whisk together the egg, vanilla extract, and almond extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a dough forms. The dough should be slightly sticky.
  5. Using your hands, form small balls of dough (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Press a whole almond into the center of each cookie.
  7. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. If desired, dust with powdered sugar before serving.
