Method
 

Step-by-Step Instructions
  1. Begin by spatchcocking your turkey. Carefully cut along the backbone and flatten the turkey by pressing down on the breastbone until you hear a crack.
  2. In a measuring cup, combine orange juice with maple syrup and stir well until blended.
  3. In a bowl, blend softened butter with minced garlic, fresh thyme, salt, and pepper to create herb butter.
  4. Loosen the turkey skin and rub some of the herb butter underneath the skin and all over the turkey.
  5. Preheat your oven to 425°F (220°C). In the roasting pan, place sliced onions and orange halves at the bottom. Lay the turkey on top.
  6. Bake the turkey at 425°F for 30 minutes to crispen the skin. Brush with glaze and lower oven temperature to 350°F (175°C).
  7. Continue to roast for an additional hour, basting every 20 minutes with remaining glaze until internal temperature reaches 160°F.
  8. Remove the turkey and rest for 30 minutes before carving to allow juices to redistribute.
