Step-by-Step Instructions
  1. Begin by dicing your chicken breast or thighs into even, bite-sized cubes. Pat dry and season with salt, pepper, and optional spices.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and brown for 5-7 minutes until golden. Remove and set aside.
  3. In the same skillet, sauté chopped onion for 2-3 minutes. Add minced garlic and cook for another minute.
  4. Add uncooked rice and stir to coat with the flavors. Toast rice for 1-2 minutes until slightly golden.
  5. Pour in chicken broth, return chicken to the skillet, drizzle with BBQ sauce, cover, and simmer for 18-20 minutes until rice is tender.
  6. Once cooked, remove from heat, let rest for a few minutes, fluff rice, and add more BBQ sauce if desired.
