- Begin by dicing your chicken breast or thighs into even, bite-sized cubes. Pat dry and season with salt, pepper, and optional spices.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and brown for 5-7 minutes until golden. Remove and set aside.
- In the same skillet, sauté chopped onion for 2-3 minutes. Add minced garlic and cook for another minute.
- Add uncooked rice and stir to coat with the flavors. Toast rice for 1-2 minutes until slightly golden.
