Method
 

Step‑by‑Step Instructions
  1. In a medium mixing bowl, combine diced apples with brown sugar, granulated sugar, ground cinnamon, and fresh lemon juice. Toss together and let sit for 10 minutes.
  2. Transfer the apple mixture to a saucepan, add 1 cup of water, and cook over medium-high heat until boiling. Reduce heat, cover, and simmer for 10 minutes until tender.
  3. In a small bowl, whisk cornstarch with 1/2 cup of the cooking liquid until smooth. Add back to the saucepan and cook, stirring, for 2-3 minutes until thickened.
  4. Preheat oven to 350°F (175°C).
  5. In a small bowl, mix together granulated sugar and ground cinnamon for the cinnamon sugar mixture.
  6. Lightly spray both sides of each tortilla with cooking spray, sprinkle with cinnamon sugar, and cut into wedges.
  7. Arrange tortilla wedges on a baking sheet and bake for 9-12 minutes until golden and crisp.
  8. Serve cinnamon sugar chips with the apple pie dip, warm or chilled.
