Method

Baking Steps
  1. Preheat your oven to 175ºC (350ºF) and prepare a half sheet baking pan (23x33 cm) lined with parchment paper.
  2. In a large mixing bowl, sift together all dry ingredients: flour, sugar, cocoa powder, espresso powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the wet ingredients: buttermilk, vegetable oil, eggs, vanilla extract, and boiling water.
  4. Gradually pour the wet ingredients into the bowl of dry ingredients, gently folding until no lumps remain.
  5. Pour the batter into the prepared baking pan and bake for 30-35 minutes. Check for doneness with a cake tester.
  6. Remove the cake from the oven and cool in the pan for about 15 minutes before transferring to a cooling rack.
  7. In a mixing bowl, beat together mascarpone, acacia honey, and vanilla paste until creamy, then add confectioners' sugar and mix until smooth.
  8. Spread the mascarpone frosting over the cooled cake, dust with cocoa powder for garnish if desired.

Notes

Allow the cake to cool completely before applying frosting for a beautiful finish. Store leftovers in an airtight container in the refrigerator.
