  • 1/2 cup Parmesan Cheese Fresh parmesan is best, but Romano works too.
  • 1/4 cup Almond Flour Crushed pork rinds can be used for even lower carb count.
  • 2 cloves Minced Garlic Fresh is preferred, but garlic powder can suffice.
  • 1 tbsp Italian Seasoning A mix of oregano, basil, and thyme is a great substitute.
For the Casserole
  • 1 cup Ricotta Cheese Can substitute with cottage cheese or omit.
  • 2 cups Keto Marinara Sauce Rao’s marinara is highly recommended.
  • 2 cups Mozzarella Cheese Fresh or shredded works; cheddar can offer a twist.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, salt, pepper, eggs, gelatin (if using), beef broth, parmesan cheese, almond flour, minced garlic, and Italian seasoning. Mix thoroughly until well incorporated.
  3. Using a cookie scoop or hands, portion the meat mixture into uniform meatballs, about 1 to 1.5 inches in diameter. Arrange them in a single layer on a baking sheet.
  4. Place the baking sheet in the preheated oven and bake the meatballs for 15 minutes, flipping halfway through.
  5. After draining any excess fat from the meatballs, layer them in a baking dish. Spoon dollops of ricotta cheese on top, followed by marinara sauce, then sprinkle with mozzarella cheese.
  6. Return the casserole to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.
