Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, combine melted unsalted butter, canned pumpkin puree, granulated sugar, egg, and vanilla extract. Stir until smooth.
  3. Gradually sift in all-purpose flour, pumpkin pie spice, baking powder, and salt. Mix until just combined.
  4. Cover the dough with plastic wrap and refrigerate for about 25 minutes.
  5. Scoop the dough and roll into balls, about 1.5 to 2 tablespoons each. Arrange on the prepared baking sheet.
  6. Bake for 18 minutes or until edges are lightly golden and centers are soft. Let cool on baking sheet.
  7. While cooling, prepare frosting by beating cream cheese and unsalted butter, then adding powdered sugar and vanilla extract until creamy.
