- In a small bowl, mash a ripe avocado with lemon juice, salt, and pepper until creamy. Set aside.
- Take two slices of bread and spread mayonnaise on one side of each. On one slice, spread the avocado mixture, add chicken, and cheese. Top with the second slice, mayo side out.
- Melt butter in a skillet over medium heat. Grill the sandwich for 3-4 minutes until golden brown.
- Flip the sandwich and cook for another 3-4 minutes until golden and cheese is melted.
- Remove from heat, slice diagonally, and serve immediately.
