Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt and black pepper on both sides.
In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown.
While the chicken is cooking, in a small bowl, mix together the crumbled feta cheese, honey, red pepper flakes, and lemon juice.
Once the chicken is browned, remove the skillet from heat and spoon the feta mixture evenly over the chicken breasts.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove from the oven and let the chicken rest for 5 minutes. Garnish with chopped parsley before serving.
