  • 2 cups strawberries hulled and sliced
  • 2 cups blueberries
  • 2 cups pineapple diced
  • 2 cups kiwi peeled and sliced
  • 2 cups mango diced
  • 1/4 cup honey
  • 1 lime juiced
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish optional

Method
 

  1. In a large mixing bowl, combine the strawberries, blueberries, pineapple, kiwi, and mango. Gently toss the fruits together to mix them evenly.
  2. In a small bowl, whisk together the honey, lime juice, and vanilla extract until well combined.
  3. Drizzle the honey-lime dressing over the mixed fruit and gently toss to coat all the fruit evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, give the salad a gentle toss and garnish with fresh mint leaves if desired.
