Ingredients
  

  • 2 large boneless skinless chicken breasts (about 1 pound total)
  • 1/4 cup honey
  • 1/4 cup lime juice about 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 ripe mango diced
  • 1/2 red onion finely chopped
  • 1/2 red bell pepper diced
  • 1 jalapeño seeded and minced (optional)
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • Salt to taste

Method
 

  1. In a small bowl, whisk together honey, lime juice, olive oil, garlic powder, chili powder, salt, and pepper. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  2. While the chicken is marinating, prepare the mango salsa. In a medium bowl, combine diced mango, red onion, red bell pepper, jalapeño (if using), cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.
  3. Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through.
  4. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  5. Serve the sliced chicken topped with mango salsa. Enjoy!
