For the Chicken Marinade
  • 1 pound Boneless, Skinless Chicken Breasts
  • 2 tablespoons Honey can substitute with maple syrup
  • 2 tablespoons Lime Juice fresh preferred
  • 1 teaspoon Lime Zest
  • 1 tablespoon Olive Oil or avocado oil
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin or coriander if desired
  • 1 teaspoon Smoked Paprika or regular paprika
  • to taste Salt & Pepper
For the Avocado Rice
  • 2 cups Cooked Jasmine or Basmati Rice or cauliflower rice
  • 1 whole Ripe Avocado fully ripe for easy mashing
  • 1 tablespoon Extra Lime Juice
  • to taste Fresh Cilantro or Parsley optional for garnish
  • to taste Chili Flakes optional for spice
  • to taste Toasted Sesame Seeds optional garnish

Method
 

Steps
  1. In a mixing bowl, whisk together honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper. Coat the chicken breasts evenly with the marinade and cover. Let marinate for 30 minutes to 2 hours.
  2. Preheat a grill pan over medium-high heat with a drizzle of olive oil. Cook the marinated chicken breasts for 5-6 minutes on each side until golden-brown and reaches 165°F (75°C).
  3. In a separate bowl, mash the ripe avocado until smooth. Add fresh lime juice, olive oil, and a pinch of salt, then fold in the warm cooked rice until creamy.
  4. Assemble by layering the creamy avocado rice on a plate, topping it with sliced chicken. Garnish with cilantro, lime zest, chili flakes, and sesame seeds.
  5. Serve immediately, drizzling with extra lime juice as desired.
