Preheat your oven to 375°F.
In a medium bowl, whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, garlic powder, onion powder, salt, black pepper, and thyme until well combined.
Place the chicken thighs in a large baking dish and pour the honey Dijon mixture over the chicken, making sure each piece is well coated.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F.
For a crispy skin, broil the chicken for an additional 2-3 minutes at the end of cooking.
Let the chicken rest for 5 minutes before serving.
