Step-by-Step Instructions for Homemade Classic French Ratatouille
  1. Preheat your oven to 200°C (390°F). Slice the eggplants, zucchini, onions, and bell peppers into even pieces and set them aside.
  2. In a medium bowl, combine finely chopped fresh basil and parsley with olive oil, minced garlic, salt, and pepper. Stir until well-blended.
  3. In a large skillet, heat olive oil over medium heat. Add red onion and bell peppers, sauté for 5-7 minutes. Stir in garlic, thyme, salt, and pepper, cooking for another minute, then pour in crushed tomatoes and simmer for 10 minutes.
  4. Arrange eggplant, zucchini, and remaining bell peppers on top of the sauce, season lightly, and drizzle with the herb mixture.
  5. Cover with aluminum foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes until tender and lightly charred.
  6. Let cool slightly and serve hot or at room temperature, enjoying with polenta, rice, or rustic bread.

Notes

For uniform cooking, slice vegetables evenly. Fresh herbs elevate the flavor and avoid overheating when reheating.
