Ingredients

For the Base
  • 1 medium Eggplant
  • 2 medium Zucchini
  • 4 medium Tomatoes (Roma)
  • 1 medium Red Onion
  • 2 medium Bell Peppers (Yellow and Red)
For the Sauce
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic minced
  • 1 can Crushed Tomatoes
For the Herbs
  • 1 bunch Basil fresh, chopped
  • 1 teaspoon Oregano fresh, chopped
  • 1 teaspoon Thyme fresh, chopped

Equipment

  • Oven-proof skillet

Method

Step-by-Step Instructions
  1. Begin by rinsing and slicing the eggplant, zucchini, red onions, and bell peppers into even, bite-sized pieces.
  2. Finely chop the fresh basil, oregano, and thyme, and combine them in a bowl with minced garlic and a drizzle of olive oil.
  3. While the herb dressing marinates, preheat your oven to 200°C (390°F).
  4. In a large oven-proof skillet, heat a couple of tablespoons of olive oil over medium heat. Sauté the diced red onions and bell peppers until they soften.
  5. Layer the sliced eggplant, zucchini, and remaining vegetables neatly over the sauce in the skillet.
  6. Cover the skillet with a lid or aluminum foil, and bake in the preheated oven for 40 minutes.
  7. Once baked to perfection, remove the skillet from the oven and let it cool slightly. Serve hot.

Notes

Ensure you slice all vegetables evenly for consistent cooking. Use fresh herbs for optimal flavor. You can substitute seasonal vegetables as preferred.
