Ingredients
  

  • 2 pounds bone-in skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 lemon zested and juiced
  • 1/2 cup chicken broth
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, black pepper, paprika, lemon zest, and lemon juice. Mix well to create a marinade.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. Heat a large oven-safe skillet over medium-high heat. Once hot, add the marinated chicken thighs skin-side down and sear for about 5-7 minutes until the skin is golden brown.
  5. Flip the chicken thighs over and pour in the chicken broth. Bring to a simmer.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with chopped parsley before serving.
