Method
 

Step-by-Step Instructions
  1. Marinate the chicken with salt, thyme, and scotch bonnet pepper. Refrigerate for at least one hour or overnight for better flavor.
  2. In a large pot, heat oil over medium-high and brown the chicken for 5-7 minutes on each side until golden.
  3. Remove the chicken and sauté onions, garlic, ginger, and bell peppers in the same pot for 5-6 minutes.
  4. Return chicken to the pot, add tomatoes, carrots, soy sauce, and brown sugar. Stir to combine.
  5. Add chicken stock to cover the chicken halfway, bring to a boil, then reduce heat to low and simmer for 1-2 hours.
  6. Taste and adjust seasoning, adding salt or brown sugar as needed. If too thick, add a splash of water or stock.
