Method

Step-by-Step Instructions
  1. Brown the Meat: Pat the chuck roast dry, season with salt and pepper. Heat olive oil and brown meat in batches for 3-4 minutes per side.
  2. Sauté the Aromatics: Add onions to the pot, cook for 5 minutes. Stir in garlic, thyme, and rosemary, cook for 1 minute.
  3. Deglaze the Pot: Pour in Guinness, scraping up browned bits. Bring to a boil, reduce for 2-3 minutes.
  4. Simmer the Stew: Return meat, add bay leaves and beef stock. Cover and bake at 325°F for 1.5 hours.
  5. Add the Vegetables: Stir in carrots, potatoes, celery, and mushrooms. Return to oven for another 1.5 hours.
  6. Prepare the Dumpling Mix: Combine Bisquick, garlic powder, cheese, and chives in a bowl. Add milk to form a sticky dough.
  7. Add Dumplings to Stew: Drop dough on stew, cover and cook for 10 minutes. Uncover and cook for another 10 minutes.
  8. Let It Rest: Remove pot from heat and let rest for 15-30 minutes before serving.
