  • 1-2 cups shredded cheese Cheddar, colby jack, or pepper jack recommended.

Step-by-Step Instructions
  1. Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat. Add diced Yukon gold potatoes, stirring occasionally for 5-6 minutes until golden brown and tender.
  2. Push the potatoes to one side and add 1 pound of lean ground beef, breaking it into crumbles. After 2-3 minutes, add chopped yellow onion and red bell pepper. Season with salt and pepper, cooking for an additional 4-5 minutes.
  3. Stir in 1 can of diced green chiles, 1 teaspoon of chili powder, ground cumin, and smoked paprika. Cook for 6-8 minutes until potatoes are tender and beef is seasoned.
  4. Sprinkle 1-2 cups of shredded cheese over the top, cover, and cook on low heat for 1 minute until cheese is melted.
  5. Remove from heat and garnish with chopped cilantro if desired. Serve hot straight from the skillet.
