Step-by-Step Instructions for Crockpot Chicken Pot Roast
  1. Lightly grease the inside of your slow cooker with cooking spray or a drizzle of oil.
  2. Place the chicken thighs neatly at the bottom of the slow cooker.
  3. Chop carrots, celery, and onion into bite-sized pieces, and layer them on top of the chicken thighs.
  4. Pour the chicken broth over the arranged vegetables and chicken.
  5. Sprinkle fresh or dried thyme and rosemary over the top, followed by salt and pepper.
  6. Cover your slow cooker with its lid and set it to cook on low for 4 hours.
  7. After 4 hours, check that the chicken is fully cooked and easily shreds with a fork.
  8. If a thicker gravy is desired, mix cornstarch with water to create a slurry and add to the slow cooker.
  9. Once ready, serve hot with crusty bread or creamy mashed potatoes.
