Preparation Steps
- Preheat your oven to 400°F (200°C). Arrange corn tortillas on a baking sheet, brushing each lightly with vegetable oil. Bake for 8-10 minutes, or until golden brown and crisp.
- In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent and soft. Stir in the minced garlic and taco seasoning, cooking for an additional minute until fragrant.
- Add 1 pound of lean ground beef to the skillet, breaking it apart with a spatula as it cooks. Brown the beef for about 5-7 minutes, until it's no longer pink. Mix in 1/4 cup of salsa and heat through.
- While your beef is cooking, heat a can of refried beans in the microwave in 30-second intervals until warm, about 1-2 minutes.
- Assemble your ground beef tostadas by spreading warm refried beans on each tostada shell. Top with seasoned ground beef mixture, shredded lettuce, diced tomato, and avocado. Finish with shredded cheddar cheese.
- Add a dollop of sour cream and sprinkle fresh cilantro on each tostada. Serve with additional salsa on the side and enjoy!
