For the Zucchini
  • 2 medium Zucchini Sliced into thick rounds

For the Grains
  • 2 cups Cooked Grains (quinoa, rice, or farro)
For the Creamy Sauce
  • 1 cup Sour Cream or Greek Yogurt For creaminess
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 2 tablespoons Fresh Parsley or Chives Chopped

Method
 

Preparation
  1. Pat the steak dry and rub with olive oil, salt, black pepper, garlic powder, and smoked paprika. Let rest for 20 minutes.
  2. Preheat the grill to 450°F to 500°F.
  3. Slice zucchini, brush with olive oil, and sprinkle with salt. Grill for 2-3 minutes per side.
  4. Grill the steak for 4-5 minutes on each side for medium-rare. Let rest for 5 minutes before slicing.
  5. Prepare grains according to package instructions.
  6. In a bowl, combine sour cream or yogurt with mustard, garlic powder, smoked paprika, salt, and water to desired consistency. Stir in parsley or chives.
  7. Assemble the bowl with grains at the bottom, topped with zucchini, steak slices, and creamy sauce.
