Ingredients
  

  • 2 6-ounce salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe mango diced
  • 1/2 red bell pepper diced
  • 1/4 red onion finely chopped
  • 1 jalapeño seeded and minced
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • Salt to taste

Method
 

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture over both sides of the salmon fillets.
  3. Place the salmon on the grill and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork.
  4. While the salmon is grilling, prepare the mango salsa. In a medium bowl, combine diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt. Mix well.
  5. Once the salmon is cooked, remove it from the grill and let it rest for a couple of minutes.
  6. Serve the grilled salmon topped with the fresh mango salsa.

Notes
