  • 4 slices cooked bacon crumbled
  • 1 tbsp fresh parsley for garnish
  • 2 tbsp green onions thinly sliced

Equipment

  • Grill
  • heavy-duty foil
  • mixing bowl

Method

Preparation Instructions
  1. Begin by washing and cutting the red potatoes into uniform 1-inch chunks.
  2. In a separate bowl, whisk together olive oil, ranch seasoning, garlic powder, salt, and black pepper.
  3. Pour the seasoning mixture over the potato chunks and toss until evenly coated. Allow to rest for 10 minutes.
  4. Preheat the grill to 400°F and prepare heavy-duty foil for wrapping the potatoes.
  5. Transfer the seasoned potatoes onto a large sheet of foil and fold the edges to create a sealed packet.
  6. Place the foil packet on the grill and cook for 10 minutes; flip and grill for an additional 10 minutes.
  7. Open the foil packet and sprinkle cheddar cheese and crumbled bacon over the potatoes. Return to the grill for 2-3 minutes to melt the cheese.
  8. Remove from the grill and garnish with parsley and green onions before serving.

Notes

For best results, allow seasoned potatoes to sit for 10 minutes before grilling. Store leftovers in an airtight container for up to 4 days.
