Ingredients
  

  • 4 ears of fresh corn husked
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 1-2 tablespoons chipotle adobo sauce adjust to taste
  • Lime wedges for serving

Method
 

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil and sprinkle with salt and chili powder.
  3. Place the corn directly on the grill and cook for about 10-15 minutes, turning occasionally, until charred and tender.
  4. While the corn is grilling, in a bowl, mix together the mayonnaise, chipotle adobo sauce, and lime juice until well combined.
  5. Once the corn is done, remove it from the grill and let it cool slightly.
  6. Brush the chipotle mayonnaise mixture generously over each ear of corn.
  7. Sprinkle crumbled cotija cheese and chopped cilantro over the top.
  8. Serve immediately with lime wedges on the side for squeezing over the corn.
