Preheat your oven to 425°F (220°C).
In a small bowl, mix together olive oil, salt, black pepper, garlic powder, thyme, rosemary, and oregano to create a seasoning paste.
Rub the seasoning paste all over the chicken, including under the skin and inside the cavity.
Stuff the cavity with the halved lemon and crushed garlic cloves.
Place the chicken breast-side up in a roasting pan or oven-safe skillet.
Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
Let the chicken rest for 10-15 minutes before carving. Garnish with fresh herbs if desired.
