Ingredients

Main Ingredients
  • 680 g large shrimp peeled and deveined
  • 340 g andouille or smoked sausage sliced
  • 450 g baby potatoes
  • 3 ears corn cut into sections
Sauce Ingredients
  • 115 g unsalted butter
  • 6 cloves garlic minced
  • 60 ml chicken or seafood broth
  • 15 ml lemon juice
Seasonings
  • 15 ml olive oil
  • 2 tsp Old Bay seasoning divided
  • 2 tsp Cajun seasoning divided
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
Garnish
  • 30 g chopped parsley
  • lemon wedges for serving

Equipment

  • large pot Essential for boiling the potatoes and corn.
  • large skillet Needed for browning the sausage and cooking the shrimp.
  • Colander Important for draining boiled ingredients efficiently.

Method

Preparation
  1. Boil baby potatoes in salted water for about 12-15 minutes until they are soft enough to pierce with a fork but not falling apart.
  2. Once the potatoes are nearly done, add corn sections to the same pot for about 5 minutes.
  3. Toss the peeled and deveined shrimp with olive oil, garlic powder, onion powder, black pepper, Old Bay seasoning, and Cajun seasoning until evenly coated.
  4. In a large skillet, cook sliced sausage over medium heat for 4-5 minutes until browned with some caramelization.
  5. Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side until opaque and pink.
  6. Add unsalted butter to the skillet and melt it, then introduce the minced garlic. Sauté for about 30 seconds until fragrant but not browned.
  7. Add the cooked potatoes, corn, and browned sausage to the skillet. Toss gently for 2-3 minutes until all components are coated with the garlic butter sauce.
  8. Return the cooked shrimp to the skillet just to warm through, ensuring all ingredients are integrated without overcooking the shrimp.

Notes

Serve hot, garnished with freshly chopped parsley and lemon wedges.
