  • 1 cucumber diced
  • 1 bell pepper any color, diced
  • 1/2 red onion thinly sliced
  • 1/4 cup fresh basil leaves chopped
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, bell pepper, red onion, and basil. Toss gently to mix the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  4. Sprinkle the crumbled feta cheese on top of the salad.
  5. Serve immediately or chill in the refrigerator for about 15 minutes before serving for a refreshing taste.
