  1. Preheat your oven to 350°F for glass or dark pans, or 375°F for light pans. Grease a 13x9-inch baking pan.
  2. In a bowl, whisk together 1 cup of sugar, 3 cups of flour, 1 tsp of baking powder, ½ tsp of salt, and ¼ tsp of cinnamon. Cut in 1 cup of butter until crumbly, then add 1 egg and stir until combined.
  3. Press more than half of the dough into the baking pan to form the crust base.
  4. In a separate bowl, combine ½ cup of sugar, 1 tbsp of cornstarch, and ¼ tsp of cinnamon. Add 4-5 cups of diced peaches and 1 tsp of lemon juice, mixing gently.
  5. Pour the peach mixture over the crust, spreading it evenly.
