- Slice the tops off the sweet bell peppers and remove the seeds. Place cut-side down in a baking dish with half an inch of water and bake for 20 minutes.
- Heat olive oil in a skillet, sauté diced onion until translucent (approx. 5 minutes). Add minced garlic and cook for another minute. Stir in corn, black beans, diced tomatoes with green chiles, and taco seasoning, cooking for 3-4 minutes.
- Mix in cooked rice, one cup of shredded cheese, and chopped cilantro until well combined.
