Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the tops off the sweet bell peppers and remove the seeds. Place cut-side down in a baking dish with half an inch of water and bake for 20 minutes.
  3. Heat olive oil in a skillet, sauté diced onion until translucent (approx. 5 minutes). Add minced garlic and cook for another minute. Stir in corn, black beans, diced tomatoes with green chiles, and taco seasoning, cooking for 3-4 minutes.
  4. Mix in cooked rice, one cup of shredded cheese, and chopped cilantro until well combined.
  5. Remove peppers, drain excess water. Stuff each pepper with the filling and top with remaining cheese. Bake for another 10-15 minutes until cheese is bubbly and golden.
