  • 2 slices classic sandwich bread brioche or sourdough for enhanced flavor

  • 2 ounces deli ham or turkey breast, crispy bacon

Method
 

Step-by-Step Instructions
  1. In a medium bowl, crack open four free-range eggs and add a pinch of kosher salt and a sprinkle of white pepper. Beat until combined and slightly frothy, about 1-2 minutes.
  2. Place a non-stick skillet over medium heat for about 2 minutes. Add 2 tablespoons of unsalted butter and let it melt and bubble gently, which should take another 1-2 minutes.
  3. Pour the beaten eggs into the skillet, spreading them evenly. Cook undisturbed for 5-7 minutes until set around the edges while remaining soft in the center.
  4. Butter one side of each slice of bread and lay them butter-side up on a clean plate.
  5. Once the eggs are set, place the prepared slices of bread butter-side up directly on top of the eggs in the skillet and cook for about 2 minutes.
  6. Carefully slide a spatula beneath the sandwich and flip it over. Cook for an additional 2 minutes or until the bread is golden brown.
  7. On the top slice of bread, layer a slice of cheddar cheese and several pieces of deli ham. Cook for another 2-3 minutes to melt the cheese.
  8. Remove the sandwich from the skillet onto a cutting board. Slice in half and enjoy warm!
