Ingredients
  

Filling
  • 1 tablespoon Olive Oil or vegetable oil
  • 1 Brown Onion or yellow onion
  • 2 cloves Garlic minced
  • 1 pound Lean Ground Beef or ground turkey/chicken
  • 2 tablespoons Taco Seasoning can use homemade
  • ½ cup Tomato Purée or tomato sauce
  • ¼ cup Water/Beef Broth low-sodium for health
  • to taste Salt and Black Pepper
Wrap
  • 4 Flour Tortillas or whole wheat
  • 1 cup Mature Cheddar Cheese or Monterey Jack
  • 1 cup Monterey Jack Cheese or mozzarella
Optional Toppings
  • ½ cup Sour Cream or Greek yogurt
  • ½ cup Guacamole
  • ½ cup Salsa mild or hot
  • to taste Fresh Cilantro omit if not a fan

Method
 

Cooking Steps
  1. Heat olive oil in a large frying pan over medium-high heat. Add brown onion, cooking until translucent, about 3-4 minutes. Stir in minced garlic and sauté for an additional minute.
  2. Add lean ground beef to the pan, breaking it up as it cooks. Stir frequently for 5-7 minutes until browned. Drain excess fat.
  3. Mix in taco seasoning, salt, and black pepper to taste. Pour in tomato purée and water or beef broth. Simmer for 3-5 minutes to thicken.
  4. Lay a flour tortilla on a flat surface. Sprinkle cheddar cheese, add savory beef filling, top with more cheese, and fold the tortilla.
  5. In the same pan, add more oil if necessary. Cook folded quesadilla for 2-3 minutes on each side until golden and crispy.
  6. Transfer to a cutting board, cool for a minute, then slice into wedges. Serve with your favorite toppings.
