  • 1/4 cup Lemon Juice Fresh juice is best

  • 1 tablespoon Seasoned Salt Feel free to adjust
For the Spices
  • 1 teaspoon Smoked Paprika Recommended for flavor enhancement
  • 1 teaspoon Cumin
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Turmeric
  • 1/4 teaspoon Cayenne Omit for a milder version
For the Rice & Veggies
  • 1 cup Long Grain White Rice No substitutes
  • 1 medium Zucchini Can be swapped with bell peppers or broccoli
  • 2 cups Chicken Broth Use vegetable broth for vegetarian option
For Serving
  • 1 cup Tzatziki Sauce Store-bought or homemade
  • 1/4 cup Fresh Parsley Or dried herbs at a 1:2 ratio
  • 1/4 cup Oregano
  • 1/4 cup Thyme

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. Combine the chicken with lemon juice, olive oil, and spices, tossing until coated. Marinate for 30 minutes.
  3. Add long grain white rice and grated zucchini to the baking dish with the marinated chicken. Pour in chicken broth and stir gently.
  4. Cover the dish with aluminum foil and bake for 45-55 minutes for metal pans or 50-60 minutes for glass dishes.
  5. Remove from oven, fluff rice with a fork, and serve warm topped with tzatziki sauce and fresh herbs.
