Ingredients
  

For the Salad
  • 4 cups Seedless Watermelon cut into cubes
  • 1 cup Fresh Basil sliced
  • 1 cup Feta Cheese crumbled
  • 0.5 teaspoon Kosher Salt to taste
  • 0.25 teaspoon Freshly Ground Black Pepper to taste
For the Dressing
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 tablespoon Honey or maple syrup for vegan
  • 2 tablespoons Olive Oil or avocado oil
  • 1 tablespoon Champagne Vinegar or white wine vinegar

Method
 

Preparation
  1. Cut the watermelon into bite-sized cubes and place in a large bowl.
  2. Slice basil leaves thinly and set aside.
  3. Crumble the feta cheese and set aside.
Mix Salad Base
  1. Combine watermelon, basil, and feta in the bowl and toss gently.
Whisk Dressing
  1. In a small bowl, whisk lime juice, honey, olive oil, and champagne vinegar until smooth.
Combine Salad and Dressing
  1. Pour the dressing over the salad and toss gently to coat.
Season to Taste
  1. Add kosher salt and black pepper; mix gently.
Serve
  1. Serve immediately or chill for up to one hour before serving.
