Method
 

Baking Instructions
  1. Preheat your oven to 425°F (220°C) and line a muffin tin with baking liners.
  2. Sift together the dry ingredients in a bowl and set aside.
  3. Whisk together the wet ingredients in a separate bowl until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Fill each muffin well about ¾ full with the batter.
  6. Combine the streusel topping ingredients in a small bowl and sprinkle over each muffin.
  7. Bake at 425°F for 5 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 16-17 minutes.
  8. Allow muffins to cool in the pan for 3-5 minutes before transferring to a rack.
  9. Whisk together the icing ingredients and drizzle over cooled muffins.
  10. Serve warm or at room temperature.
