Preparation Steps
  1. In a large mixing bowl, combine 1 cup of nut butter, 1 cup of pumpkin puree, 1/4 cup of maple syrup, and 1 teaspoon of vanilla extract. Mix until smooth.
  2. Gradually add in 1/2 cup of coconut flour, 2 teaspoons of pumpkin pie spice, and a pinch of salt. Stir until a cohesive dough forms.
  3. Gently fold in 1/2 cup of mini chocolate chips, ensuring an even distribution.
  4. Chill the dough in the refrigerator for about 10-15 minutes to firm it up.
  5. Melt 1/2 cup of chocolate chips with 1 teaspoon of coconut oil in the microwave. Stir well until smooth.
  6. Once chilled, scoop out portions and roll into 1-inch balls. Dip each ball into the melted chocolate.
  7. Chill the coated bites in the refrigerator or freezer for 20-30 minutes to set the chocolate.
