Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 14-cup Bundt pan with non-stick spray and flour.
  2. In a large bowl, mash 2 cups of ripe bananas until smooth, then stir in crushed pineapple, shredded coconut, eggs, oil, granulated sugar, brown sugar, and vanilla. Beat until creamy.
  3. In another bowl, whisk together flour, baking soda, salt, cinnamon, and cloves. Gradually combine with the wet ingredients.
  4. Pour the batter into the prepared Bundt pan, filling no more than two-thirds full.
  5. Bake for 50 to 60 minutes, checking for doneness with a toothpick.
  6. Let the cake cool in the pan for 20 minutes, then invert onto a wire rack.
  7. For frosting, beat cream cheese and butter until smooth. Gradually add confectioners' sugar, vanilla, and salt.
  8. Spread cream cheese frosting over the cooled cake and sprinkle with toasted pecans if desired.

Notes

Use medium ripe bananas for optimal sweetness. Don't overmix the batter, a few lumps are fine. Let the cake cool completely before frosting.
